A nice summer salad recipe.
Buy one of those clear plastic caskets of grape tomatoes, slice them all in half, and put them in a bowl. To the bowl, add a generous amount of olive oil, a splash of balsamic vinegar, generous amount of fresh ground black pepper, and some salt. Mix it all up and let it sit for a while.
Then add:
• Mozzarella cut up into cubes;
• Some cubed italian bread (not the kind that comes sliced in a bag, and it helps if it's a day or so passed good-to-eat but not yet totally hard and stale;
• Fresh basil, cut up frisée (to do this, hold the leaves of basil in a tight bunch in your hand, then chop with a chef's knife as think as you can).
Mix it all up and again, let it sit for a bit.
Note that the "letting it sit for a bit" is optional. I made it last night and ate half of it right out of the mixing bowl and it was yum. But when I polished off the balance today, it was even better.
And one more thing: it's best enjoyed at room temperature. If you're impatient like me, then Room Temperature = 15 Seconds in the microwave.
